Slow cookers are a busy mom’s best friend! Toss this together in the morning, then just before you’re ready to eat cook up some rice and a green veggie, and dinner’s done.
boneless, skinless chicken breasts (or thighs), (cut into large chunks)
low-sodium soy sauce
coconut milk (from can)
brown sugar or cane sugar
white onion (chopped)
crushed pineapple with juice
green onions (chopped for garnish)
Combine all ingredients except green onions in the slow cooker. Cook for 4 hours on high or 6 hours on low. Serve over rice, and garnish with green onions.
