Pulled Pork with Chipotle BBQ Sauce


This pulled pork can be made with your favourite bottled sauce or if you are feeling daring, why not try making this homemade BBQ sauce


2 tablespoons

smoked paprika (for the rub)

2 tablespoons

brown sugar (for the rub)

1 tablespoon

grainy mustard (for the rub)

1 teaspoon

turmeric (for the rub)

1 tablespoon

salt (for the rub)

1 tablespoon

black pepper (for the rub)

1 tablespoon

chile powder (for the rub)

1 tablespoon

ginger powder (for the rub)

1 teaspoon

ground cumin (for the rub)

1 teaspoon

ground coriander seeds (for the rub)

10 drops

worchestershire sauce (for the rub)


garlic bulb

4 tablespoons

white vinegar (this makes the meat very soft)

3 cups

chicken stock (or you can use water)


Use your hands to rub all the ingredients all over the pork till it is thouroughy red and worked in.

Let it sit in the spice rub overnight in the fridge. The next morning turn the slow cooker on low and slice one white onion. Take half of the onion and put it in the bottom of the slow cooker.  Put the pork on top of this then throw the rest of the onion over top of the pork.   Fill the slow cooker with water or chicken stock 2/3 the way up the height of the pork.   Add 4 tbsp of white vinegar and throw in an unpeeled garlic bulb. Cover with lid and let cook for 8hrs. By this point the meat will be fully cooked and fall apart soft. Empty out all the broth and onions and garlic and set the pork in a bowl to cool a little before shredding. Leave the slow cooker on!  Dice up one white onion and throw it in the cooker. Pull the pork apart in shreds and add it to the diced onion and then add your BBQ sauce, stir thoroughly till all the meat is covered in BBQ sauce and cover with a lid, cook for 2 more hrs.  Serve on white buns. This pork will melt in your mouth!
